Addie's Cuban Sandwich
1 Sub Roll ( Cuban Bread or other soft bread)
1 Tbs jalapeño Mayonnaise
1 Tbs Butter
6 slices Bread & Butter Pickles
3 oz of Mojo Roast Pork
1 oz Ham
2 oz Red Dragon Cheese ( Grain Mustard & Ale Cheese)
Split the roll lengthwise and spread the mayonnaise on the inside of the roll. Layer the pork, Ham, Pickles and Cheese on the bread. Close the roll and spread the butter on the outside of the bread. Place the sandwich in a Panini or grill pan and cook over medium heat until the bread is golden brown and the cheese is melted. The sandwich can be done in a 400 degree oven if you do not have a grill pan.
Mojo Roast Pork
1 boneless pork shoulder
1 large yellow onion
10 cloves garlic
2 Tbs kosher salt
2 Tbs dry oregano
1 Tbs Black Pepper
¼ cup red wine vinegar
½ cup olive oil
Finely dice the onion and garlic. Combine onion, garlic, spices, vinegar and olive oil and mix well. Marinate the pork in the mixture for up to 12 hours. Preheat an oven to 350 degrees. Place the pork in a roasting pan and pour remaining marinade over the pork. Roast the pork until an internal temperature of 155 degrees is reached. Approximately 2 hours. Remove from the oven and allow to cool before slicing.
Jalapeño Mayonnaise
2 whole eggs
2 Tbs red wine vinegar
1 ea chopped jalapeño
2 tsp kosher salt
2 tsp sugar
2 cups vegetable oil
Combine eggs, vinegar, jalapeño, salt and sugar in a food processor. Slowly drizzle oil into the bowl of the food processor while mixing until it is thi
